CLASS CHARACTERISTICS The Food Service Assistant class is the entry- and working-level class in the series.
Incumbents perform a wide variety of routine food preparation, stocking, serving, sales and kitchen maintenance duties with guidance from a higher-level food service class.
Positions in this class may be assigned to a satellite kitchen, a food production kitchen at a school site and/or the central kitchen.
Incumbents may be assigned to substitute in a variety of positions.

Prepare or assist in the preparation of a variety of foods by performing tasks such as cleaning and chopping fruits and vegetables; assembling sandwiches and salads; mixing salad dressings, puddings and gelatins from standard recipes; opening cans; heating foods; panning foods; cutting prepared foods to serving sizes and preparing beverages; placing foods in ovens for heating and in warmers to maintain proper temperature before serving.
Assist in the preparation and cooking of main dishes and other items, as assigned.
Set up food line and serve daily menu courses to students.
Clean and store dishes, utensils, cafeteria equipment and food supplies; clean and sanitize work areas and dispose of refuse.
Collect money for food and beverages and make change; accept meal cards.
Prepare simple records of cash collected and food sold; assist in taking inventories.
Assure that appropriate quantities of food are set up in a timely manner for assigned serving station.
Work on food production and packaging lines performing repetitious food handling and equipment operation tasks.
Participate in District-mandated training and retraining programs.
Perform related work as assigned.
QUALIFICATIONS Knowledge of:
Basic methods, terminology, ingredients, equivalent measures and abbreviations used in food preparation.
Safe kitchen work practices.
Basic food handling, kitchen sanitation techniques, and personal hygiene related to food handling.
Basic methods of cleaning and maintaining food service areas, utensils and equipment.
Basic arithmetic.
Ability to:
Read and follow production sheets.
Add, subtract, multiply and divide three-digit numbers, use simple fractions to increase and decrease recipes and make change quickly and accurately.
Learn to operate specialized and automated large quantity food production equipment and appliances safely and quickly.
Maintain high standards of sanitation and hygiene.
Write to record counts and cash and to label foods.
Clean workstation and equipment.
Understand and carry out oral and written instructions.
Establish and maintain effective relationships with those contacted in the course of work.
EDUCATION AND EXPERIENCE Any combination of training, education, and experience which demonstrates possession of the knowledge and abilities stated above, and the ability to perform the duties of the position.
A typical qualifying entrance background is one year of routine food preparation and/or serving experience.
Possess ServSafe Food Handler Certificate.
